In search of the traditionally made dairy foods that continue to sustain this central Asian nation


Out on the emerald pastures of Kyrgyzstan, the saying goes, “When the ground bursts open with grass, the udders explode with milk.” Here, escarpments of wildflowers meet glacier-fed rivers in the shadow of the Tien Shan, or Celestial mountains. It’s a landscape made for grazing livestock.
